This is my favorite, easy Lemon Chicken recipe!
Fast forward years later, and this is still one of my favorite ways to prepare chicken.
The simplicity of the dish not only makes this an easy meal, but the flavor is out of this world!
It’s really simple, you’re just going to make a quick lemon sauce, consisting of lemon juice, olive oil, spices, parsley, and a little red wine vinegar. Shake it up and that’s it!
You can marinate the chicken in half the lemon sauce overnight if you prefer.
Depending on how much time I have available, I’ve actually taken this marinade and took a whole chicken, allowed it to marinate overnight, then I smoked the chicken the next day.
After 30 minutes under the broiler, I take the chicken and dip it in the lemon sauce, then I roast it for another 3-5 minutes.
Don’t forget to take the remaining sauce and bring to a boil, then reduce to serve with the chicken for dipping.
I served my chicken with asparagus that was coated in the lemon sauce then roasted for about 10 minutes.
This dish is not only beautiful, it’s beyond delicious!
Roasted Lemon Chicken Copycat

Cook Time: 35 minutes
Total Time: 40 minutes
4 chicken breast, bone in, skin on
1 tablespoon creole seasoning
1/2 tablespoon black pepper
1/2 tablespoon garlic powder
1/2 tablespoon onion powder
2 teaspoons chili powder
extra virgin olive oil
For the Lemon Sauce:
1 1/2 cups lemon juice
1 cup extra virgin olive oil
2 cloves garlic, minced
3 tablespoons Italian parsley, chopped
1 tablespoon red wine vinegar
1 tablespoon seasoning blend (recipe above)
Preheat oven to broil.
Rinse chicken, pat dry. Mix seasoning blend together and reserve 1 tablespoon for lemon sauce.
Mix lemon sauce ingredients together in a covered jar, shake well.
Drizzle about 1 tablespoon of olive oil over chicken breast, rub in, season with remaining seasoning blend.
Chicken can be refrigerated and marinated for about 4 hours or overnight if desired.
Place chicken on an ovenproof roasting pan. Broil chicken for 30 minutes, flip over half way during cooking time.
Remove pan from oven, coat chicken in half of the lemon sauce. Broil 3-5 minutes more.
Remove chicken from oven.
While chicken rest, place remaining lemon sauce in a sauce pan, bring to boil, reduce to simmer and simmer lemon sauce for about 5 minutes to thicken slightly.
Serve chicken with a side of lemon sauce. If desired, take asparagus and grape tomatoes coat in lemon sauce and roast for about 10 minutes.
