You can make tortilla soup numerous ways, you can go the route of my Smoked Chicken Tortilla Soup, which takes time because you have to smoke the chicken first.
I think I’ve found my new favorite, Roasted Chicken Tortilla Soup.
Not everyone owns a smoker so I wanted to recreate the recipe in a manner that would be possible for all to enjoy the taste and flavors of Tortilla Soup.
This Roasted Chicken Tortilla Soup is my new best soup friend!
This has to be the simplest, quickest, soup I’ve ever made.
I took red and green salsa, I went with chunky red for texture and smooth green salsa. I added a few spices and used a store bought roasted chicken.
Using jarred salsa is perfect for this Roasted Chicken Tortilla soup because my family doesn’t like to bite into super chunky veggies and using salsa removed that issue from my soup pot!
Store bought chicken also saves time, I always pick up roasted chicken from Sam’s Club or Costco so this makes my life happy, happy!
Finish the Roasted Chicken Tortilla Soup off with fresh cilantro and lime juice, and it’s time to eat!

Did I mention it takes less than 30 minutes, AND, this is actually a low fat soup, but you can’t tell because the flavor is beyond delicious!
This soup is so good, I spent most of my time just drinking the broth. The broth can be used as a base for so many other wonderful soups.
Try adding corn and beans to this Roasted Chicken Tortilla Soup and really take this soup to another level.
