Divide cream cheese in half.
Grated Machego and Sharp Cheddar. If Machego is not available a good jack cheese will suffice.
Oyster sauce mixed in a bowl with honey, soy sauce, rice wine vinegar and jalapeno juice.
Slice fresh jalapeno and add to bowl with chopped garlic, ginger, and white onion.
Saute sliced jalapeno, garlic, onion, and ginger in extra virgin olive oil.
Add shredded chicken to pot with jalapeno, onion, garlic and ginger mixture and saute.
Add spice blend and mix well.
Slice tortillas in 4 pieces to prepare for frying.
Layer chip, chicken, cheese, jalapeno, and repeat until you have two to three layers.
Broil until cheese is melted and enjoy!

Not Your Mama’s Turkey Salad
The turkey came out excellent, this is what I have left over and I have to do something with it.
I was thinking soup then I said to myself why not just make a turkey salad. Quick, easy, and one bowl just like I like it.
Add plenty of chopped pecans for crunch.
Dice up all the veggies, and put everything in the bowl and stir.
Yes it is that simple.
Fried Turkey skin is the key to this dish. Fry it, drain it, dice it. Then put it in the bowl also, and your done.
Less than five minutes is all it takes for this turkey salad. Yes, it is turkey crackling.
Don’t forget the fresh lettuce.
And for sure not the tomatoes sprinkled with a little creole seasoning and black pepper
Pile the salad high as you like it on top of the lettuce and tomaotes.

We have all had a Mexican Pizza from the big bell!
Well I decided to create my own Mexican Pizza with Sausage version because I think I could make it taste much better for half the cost and I was correct.
Lift fish out with strainer and place on paper towel to assist with draining.
If you like shrimp then use that instead, or add both which would make it super savory!
I usually serve this bread with a side salad but it’s also pretty good and filling alone.
Creole Chicken Bread

- 2 Boneless, skinless chicken breast cut into 1 inch pieces
- 1 loaf Ciabatta bread
- 3 tbsp butter
- 3 tbsp extra virgin olive oil
- 1 cup onions, chopped
- 1 cup celery, chopped
- 1 cup green bell pepper, chopped
- 1 tbsp garlic, minced
- 1 tbsp creole seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp black pepper
- 1 tsp dry mustard
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 3/4 cup mozzarella cheese
- 3/4 cup cheddar cheese
Cut Ciabatta bread in half. Scoop out less than half a inch out of bread and set aside. Season diced chicken with half of creole seasoning, garlic powder, onion powder and black pepper and set aside. In a large skillet, melt butter olive oil and cook onions, celery, bell pepper, garlic for 5 minutes then season with remaining spices add chicken cook for 15 minutes. Add dry mustard, sour cream and mayonnaise. Mix all together, then mix in all cheeses and blend until melted. Put chicken mixture into bread. Put chicken on greased baking sheet. Bake at 350°F oven for about 20-30 minutes until golden brown on top. Cut into slices and serve.
